Does attacking NPC Convoys still work, in the sense that sentry guns from another corp station will not attack you if you attack the convoy?

Have no idea, the real question is why would you attack and NPC convoy?

Yes, you can attack without engaging sentry guns as long as the convoy is owned by a different corp than the one it's at, but be warned that you do take a noticeable hit to your standings, and that the convoy cargo is largely junk. If you're out to make ISK, you'd be better-off hitting HS combat anoms and their escalations.
