When I'm being blasted by a random baddie while on a mission, how do I tell what damage type they are using?

There are no "random baddies" each region/empire has it's own set of NPC baddies...

Here are two links which will show you the damage types of NPC's, the Chruker link will let you drill down to individual ships and tell you exactly what they put out.
It will also tell you the specific resists of the baddies shields/armour in order for you to equip your weapons accordingly.

On my armor tanked mission ships I like to use a reactive hardener. Mouse-over shows exactly what damage is being done.

Of course one gets to know what to expect from each NPC race (see helpful posts above).
