One does not know the value of crispy bacon until one has had bacon that cannot be made crisp. For instance, Japanese bacon.

Also, eating that rubbery translucent white fat can make you feel guilty about your health. If you crisp that fat up and make it yellow, it's easier to pretend it's kind of not there.

British bacon is a different meat than American bacon. It comes from a totally different part of the animal and crisp is not part of the aesthetic for British bacon. Since my gallbladder was removed, I can't eat it (too much fat). So all I can do is go something like "yeah, back in the good old days...."
