I stole so many towers like this ahahaha thanks for the faction towers m8s ahaha the best part is when they are crying in local, while I'm flying away in my bestower like a boss.

Could have done this:
Unanchor the stuff you could (which you did)
Empty stuff (which you did)
Take a 6-10 hour break from eve (i.e. alarm clock set to wake you at a off-hour)
Come back and un-anchor your tower.

What I think transpired was the war-deccer corp had watched you for a bit and had your usual log-in time recorded. They then gambled that you would rush to unanchor as soon as you read the war-dec message (they also probably initiated some talk with you on some occasion ... think back...).
They then had a neutral alt keep an eye on the POS. When you were about done, he signaled for the hauler to come. You know the rest.

If you w8 a good chunk of time for the risky unanchor bit, you throw their timing out and you have a better chance of running, if you so choose.
Of course, they could ahve round the clock eyes/haulers ready, but I kinda' doubt this.

I agree with the OP's idea that if you think a POS is going to be a target, instead of dismantling completely, take everything you actually care out of it and make it into as much of a nuisance to reinforce as you can. If you were doing the POS right, you were making money with it, so you can easily afford that, too.

Some guys will want you to unanchor the tower. A few friends of mine would spend all their time scouting for large faction towers, wardec people and wait with neutral haulers to scoop the tower as it unacnhors.

U sit at 150km+ cloaked bookmark the tower then when it has seconds left uncloak then warp then scoop. An alt in a gank ship is good also. Make sure the hauler is a neut.

Out of interest,and may be a counter to this:
Is it possible to warp to the pos, if the pos is targeted?

You don't warp to POS, you warp to the saved bookmark, that specifies the location in space that the POS happened to be on.
Pos being targeted or not has no relevance.
