So a friend wants to give me a buddy trial, through which i want to upgrade to full. he wants to choose plex as an option, but it doesn't show it. We wanted to sell it and split it 50/50. 250Mil each.

Any advice on how make the plex option appear.

Most likely, your friend isn't "old" enough in to choose the PLEX reward.

There is a certain timeframe (not stated how long that actually is) in which new players using the buddy invite can only choose the 30 day gametime as a reward.

There is a thread above where people offer their invites with promises of rewards for you if you then subscribe. If you friend cannot do Plexes yet, you could look for one of them that will give you the plex. I would offer myself, such as if i happened to get an ingame mail with your email address, but CCP is very clear that we can only offer in that thread.

If you read that thread CCP makes it clear that these offers are binding on the inviter, so you do not have to worry about them not following up and delivering.
