I know low sec have gate guns so. If going gate to gate, would a freighter be safe since any attackers would be trying to tank sentries. or are sentries easily tankable in low sec. Or just basically risking losing it every time?

An unescorted freighter is never safe in lo-sec.

Gate guns can be tanked rather easily. Anyone attacking you at the gate would do so in ship(s) fitted to tank gate guns.

If you have the skills to fly a freighter, and you are unescorted, consider flying a transport. These are equipped with the cov-ops cloak, and are much more agile than freighters. They can be rigged to carry upwards of 10000 m3 of cargo.
