When storing my stuff in Nullsec, ships, ammo etc - better in Citadel or station ?

Unless you are "blue" to the corporation who owns the Citadel you probably won't have docking rights. The same is true of player owned stations and outposts in sovereign space. The exception is Providence where neutrals can usually dock at stations (but not citadels). In NPC nullsec you can dock at NPC stations - same as highsec.

Thanks, but when i do join a unit that has blue rights, which would be better to leave my stuff in?
What happens if reds come and take system for example ? They can blow citadels up now right?

The citadel is likely to be the safer bet. You can be locked out of a station (and also camped in), but a citadel will send your items to asset safety, where you can send them to the nearest lowsec station or another citadel in the same system.

I'm going to build a big wall that will keep the Gallente out, and they're going to pay for it!
