Newbie scanning question

I'm sure this has been asked before and I'm sorry for repeating it if so. I have tried to find answer but I'm assuming I'm asking the wrong question or using the wrong terminology.

My mission brief is this:

Now you'll start scanning for each type of Cosmic Signature, something you can only do by using Core Scanner Probes.

First up is a Data site, and that means you need to fit to your ship the Civilian Data Analyzer you picked up earlier. Scan down the site with your Scanner Probes, find the container inside and hack it open with the Data Analyzer, then bring the results back to me. Your loot from Data sites will be useful for invention – a research process that produces blueprints for advanced Tech II ships and modules.

As a side note, while this training mission is perfectly safe, failed hacking attempts in general may cause the container to self-destruct and even cause damage to your ship - so be careful.

So do I need to simply undock and have a look around or do I need to go off somewhere and do the scan and if so where? I've looked and don't appear to have any probes. I'm assuming they don't come with the launcher? I did have a look and see if I can buy them, but couldn't see them, so at an impass at the moment. Can any please help?

It should be in the system you pulled the mission from.

As for getting probes, trade hub's are (in order of size)
Jita in caldari space
Amarr in Amarr space
Dodixi in Gallente space
Rens And Hek in minmitar space

Trade hub survival 101:
don't autopilot to or from one
Don't take from a yellow wreck unless you know what you're doing
And rather unintuitively don't shoot at the Russians.

Yeah, I just did this one last week and it's not a great way to teach someone to scan anything. Well, at least I think it's not. I haven't really scanned anything else since I'm not sure what I'm doing after completing this mission.
I went on youtube and watched some tutorials and manager to get though it, but there is no information on how to actually scan (like how to buy probes., how to release them, how to scan and focus the results etc...). I understand this is a big game and they don't want to hold your hand too much but scanning seems to be a very important part of things later on when you aren't just going from mission to mission.
Anyway, OP, have a look at this -

This helped me out to get through the mission you are on.

They don't really explain the scanning minigame (or even that there is one!) in the mission brief. You'll have to open your Probe Scanner (alt+P) like you did for the Anomalies, open the System Map from the Probe Scanner, launch a probe formation via the buttons in the Probe Scanner, and start narrowing down the Signature's location.

You can press F12 in-game and tab over to "Tutorial Videos", looking under Scanning or Exploration (I forget which) for Scanning (2 of 3), as a tutorial video for how the minigame works, or look up some youtube tutorials.

Alternately, if you prefer text, you could give https://www.thealphasguide.com/reference/scanning/ a read.

You should have picked up your probes at the same time as your launcher and analysers.

If you have already fitted your launcher to your ship, check to see if you have also loaded the probes into it.

Don't sweat asking questions that have been answered before, that is what we do here a lot. No one that has problems answering repeat questions has the patience for NQ&A or any help channel. In a way, repeat questions are better because we have a set response that we can almost copy-pasta our answers.

Ask questions, Eve is confusing. We all know it, so we won't hold it against you. We actually prefer players ask questions and learn rather than get frustrated and quit.
