Does the ingame browser support HTML5, and CREST is just another form of API (retrieval of data) rather than some uber functionality? Would jquery do as fine as Java?

IGB should generally support HTML5 but it is based on an old browser engine so somethings it doesn't understand. At this time CREST just allows you access to some of the ingame data in a form that should be easier to work with and you can use anything that understands JSON to work with it.
