I noticed that even when i run EVE on maximum settings at 3840x1200 in large fleet fights it never uses more than 2GB RAM. I have 8GB (4x2GB) RAM and WIndows 7 64bit. Does EVE generally not need more than 2GB RAM or is there something wrong with my system?

Did you ever saw a game that used more than 2 GB of Ram? You can almost count them with one hand. Eve is a 32 bit application and as such limited to 2GB (it's possible to use 4GB with some special compilation settings as far as i know). But seriously, why you expect eve to take that amount of Ram? Since DX10 it's not even necessary to have a copy of the video memory in your local Ram.
