Whats the difference?

Other than the tanking and drone bonus on the Skiff and the larger ore haul on the Mackinaw what are the differences?

Do they both mine the same amount if I am mining solo?

As well as mining yield, you need to consider how often you are likely to lose a ship, and what those costs will be when you do. A ship with a slightly lower yield that has to be replaced less often can turn out to be the most profitable in the long term.

The Skiff is the megatank of the mining world, able to soak up massive amounts of damage. My personal choice, though, is the Procurer: it can be tanked almost as heavily as the Skiff, but comes in at around 1/5th of the cost. This means that not only is it cheaper to replace, but it is a less attractive target in the first place.

The Mackinaw's strength is the much larger ore hold while the Skiff's strength is the massive tank (and speed to avoid bumpers) but in terms of yield they are pretty comparable.

If most of your wealth is going to be tied up in a single ship, make it a Skiff for sure. If you can afford losing the odd ship to gankers, the fewer trips to the station a large ore hold will give you will result in a slightly better overall profit so it might be worth it. It all depends on where you are mining and your risk tolerance.

It really depends what you and dont put into the equation.

With all the bonuses, yeah they mine about equal amounts.

But the Mackinaws bigger hold means less 'off time' unloading the ship.
However, the low HP compared to a Skiff with BS sized tank means you are the prime target of ganks.

So, do you also calculate the off time and replacement costs etc...then it can tip over to one or another.

Would 2 Skiffs/Procurer be better than 1 Skiff/Procurer and an Orca? If I were to train up an Alt in the long run what would be the better option?

2 Skiffs/Procurors would be better than 1 of either + an Orca. IIRC you need to be running 3 or 4 mining ships before the Orca becomes worthwhile, otherwise you'll be better off using the Orca pilot to mine instead of boosting the yield of others.

I always went on generalization of a fully skilled Orca would make you 33% better, while another miner makes you 100% better. That's not actual math, just a rough guess.

So 133% is less than 200%
266% is less than 300%
399% is less than 400%, but not noticably
532% is greater than 500%

So once you get to 3 miners, you would effectively be improving your fleet the same amount by adding a fourth miner or adding an Orca. Before that, you're better off adding extra miners. By the time you add a fifth toon, you absolutely want an Orca.

With just two toons, train your first for an Orca after you've finished your mining skills. Train the second to mine, then work towards a freighter. That way you'll have the Orca option available if you add extra accounts down the line, and you'll a very usable hauler alt relatively early on.
