I'm wondering what exactly the values MarketStat returns mean.

I'm only interested in what the Volume value means. Is it the total volume traded of the item in the last 24 hours through buy, sell or all orders for the selected systems? (if no systems/regions are defined is it for the entire universe?)

Sorry if this is documented somewhere, I had a look but couldn't find anything.

Simply put: EVE Central retrieves it's data from the EVE client, similar to what you get when you use the "Export" button in the EVE market window. So the meaning of values corresponds with those of the EVE client.
