Giving out the Full API - what's the worst that could happen?

Note: Full APIs don't actually exist anymore. Full and Limited APIs were replaced by Custom APIs quite a considerable time ago. Subsequently it always irks me a little, when what they actually want is a custom API with all the boxes ticked which is again odd because the information they're actually interested in is pretty specific.

The vast majority of the information provided by an API is totally irrelevant to a recruiter and they won't even look at 90% of it. Largely they're just interested in things like the characters on your account, to verify you aren't a (lazily done) spy alt, as well as your recent wallet journal, contract history and mails for the same reasons, also your skills for the sake of verifying your capabilities.

Just set it to expire at some point and never think about it again.

For eve mails, if you just delete them (and empty trash) are they secure from the API fetch?

No, deleting mails only hides them from the Eve mail interface, they still exist in the database and the API. However, I believe that the API only returns your 50 latest mails sent or received within the last 10 days.
