OS X 10.9.4 + New Monitor + Eve = No more fullscreen

Let me start with my computer's specs and a little background on this. Apologies in advance if I get a little wordy... I'm just trying to be thorough.

TLDR version: Bought a new monitor which Mac OSX Eve doesn't like, but Win7 EVE has no problem with (all the same hardware). Please help?

New Monitor
27" Asus MX279H LCD (HDMI)

Old monitor (worked fine)
Gateway 24” LP2407 HD-LCD Flat-Panel Monitor (DVI)

Backup Monitor (works fine)
23" Apple Cinema Display HD (DVI)

I've been playing eve no problems both in my OSC environment (listed above) and my Windows7 Bootcamp environment for a little over a year. No complaints, no technical issues, just lots of pew pew and me getting podded. So good times had by all.

A few days ago my old monitor (Gateway) decided to die on me. I've had it for a while so I wasn't surprised. I disconnected it, and dug my apple cinema display out of storage. Worked fine. Screen was smaller, and I'm not a fan of the older model cinema displays (their connection cables are like friggin octopi, it's crazy) so I decided to go buy a new monitor.

I landed on the Asus display. Slight upgrade in size, low profile so I have plenty of room on my desk for whatever.

My mac was in bootcamp at the time running Win7 and after getting everything set up with the new monitor I booted up Eve. Looked good. Had to make some slight adjustments to my UI but overall, nothing I wasn't expecting.

So I reboot into Mac OSX. Everything appears fine until I start Eve up.

The first indication that something wasn't right in New Eden was when the screen went black and the "Loading..." message appeared... in huge blurry letters. It was followed by the character selection screen which was again huge, blurry and barely fitting on the screen. I tried to change the resolution (it was set at some ridiculously low res) to 1920 x 1080 but the result was a migraine inducing blurry mess with the monitor returning an alert that said "Input signal out of range. Return to 1920 x 1080P".

I tried to change it to some of the other offered resolutions with no luck. Once the resolution changed I was unable to click on anything and had to wait out the timer before the system would kick it back to the previous settings.

The only time I can get the game even remotely playable is if I switch to windowed mode. Unfortunately it's only remotely playable because the bottom of my screen is chopped off (when undocked, i only see the top half of the capacitor hud). I did manage to get things somewhat back to normal by setting it at 1920 x 1036. That resolution is not available in full screen though.

Okay, yeah. That got wordy, but what am I missing. I realize that the two operating systems handle things differently but is there something I'm missing here or is Fullscreen mode completely lost to me if I run Eve using Mac OSX?

Thanks for either reading to the end, or at least scrolling down to the end. Any information/assistance will be hugely appreciated. I really want to be able to jump into Eve no matter what I may be doing at the time with my computer whether its doing work stuff in Win7 or graphic design stuff in OSX.

Looking into it.

HDMI only supports a fullscreen rez of 1080...

I dual monitor, so I keep in Window mode...

Thats what I have for now. You might check the Mac OSX res to the screen.

I am having issues with the resolution and what is cut off on screen as well. Either a large black bar along the bottom or the top.
