Is there a way to manually inject screen resolutions?

I'm running an OSX 10.9.4 hackintosh. Currently, I have to run a resolution of 1920x1080 @ 75Hz just to get edge-to-edge screen viewing; otherwise, I get black bars on either side of the viewable area. As long as I am on the desktop, this rez holds; however, Eve Online does not hold the 1080p rez @ 75Hz and drops it to 60Hz giving me the black bars again. Is there a file I can modify to get Eve to display at 1080p using 75Hz?
