I made up my Character's last name Tato. How are there other TATOs?

Truth be told, I thought "tato" was an effeminite form of "tater" -
the time-honored nick for "Potato" (a fine, southern name.)

We must accommodate the idiocracy.

What kind of GoT-esque last names would be given to bastards in the various parts of eve?

Maybe Rust in minni space

on many planets where having children out of wedlock is still stigmatized, bastards are given the last name "dust". illegitimate children are often barred from many of the opportunities that other members of the planet have, and thus are often forced to enlist in various terrestrial militias... hence, dust 514.

the official lore explanation is probably less exciting tho
