7 Geckos, 2 Hammerheads (and 1 hobhob if carrier V) would be the highest dps a carrier can get while using no drone control units.

EDIT: according to the current version of EFT. All level V skills and 3x DDA II's is 2055 dps, using up all 375 bandwith yet zero Drone control units.

12 fighters match this dps, and 13 fighters beat this dps (assuming fighter V, which a lot of carrier pilots don't have)
With fighters IV you need 4 drone control units AND carrier V to match the DPS of 7 geckos.
If you don't have Carrier V or Fighters V then 7 geckos, 2 hammers is without a doubt the best dps.

Also Geckos and hammers have nearly the same MWD speed, which is way I'd use them over a single Orge II

Just run a locator agent and assume (s)he is posting on main.

For setup I would go with something on the lines of:
Hi: Cloak, Cyno, Whatever you like (drone controls, remote shield/cap transfers, etc)
Mid: MWD, Cap shield booster, 2x Invul II, sensor boosters or omnidirectionsl/drone navigation in remaining slots
Low: Drone damage amps
Rigs: whatever you fancy depending if it's strictly pve or also possibly used for ops.

It is up to you if you use sentries or not. It is somewhat safer to not use sentries as you can be aligned and up to speed but you can substitute being aligend by having a cyno gen in some adjacent system to jump to (presuming it is not camped). The most damgerous part is warping in - carriers warp sloooooow so if hostiles come into system while you have just entered warp they can make it to your destination before you land if it is an obvious one (say a single high end cosmic anomaly in system).

I'm not sure how the changes to fighters affect them for ratting. They used to be a bit crappish for that compared to sentries.

I would also add note that ratting in carriers is not the most effective method of making isk. A properly set up battleship is better at it usually than a carrier.

Edit: Carry that mobile fitting thing and the standard fits you need to switch out. MWD is for getting faster into warp (start warp, start MWD, overheat, switch off MWD)
