Why can't we dock our ships in a similar way to this ourselves?

I would totaly manually dock in a station.... three times. After that it´s autopilot-docking as it is now.
Unless CCP takes that away when introducing manual docking, then it´s off to shoot some memorial outside of Jita.

Wait, hasn´t that happened already, once?

You would use this about 5 times and then go looking for the "disable docking animation" checkbox in the settings window, just because it takes too much time and gets old very fast.

Edit: Grr forums

Remove standings and insurance.
