The angels arc, Angel Sound, is based in the Curse region of NPC-nullsec. The guristas arc, Smash & Grab, sees you operating in Venal, another region of NPC-nullsec. So technically you could run them at the same time but it would be a lot of travel or clone jumping and I doubt it'd be worth the effort.

What you can do, however, is accept and complete the starter mission for each one (without travelling into nullsec) and then go run one full arc followed by the other one. You are able to complete the starter mission (which, in every case, is a report-to-next-agent-deep-in-nullsec mission) without leaving hisec.

The epic arc mission offers do not expire in your journal, so once you've completed the first mission the next mission offer will wait, indefinitely, until you are ready to head into Curse / Venal to run the rest.

These are lvl3 epic mission arcs, and you need the basic lvl3 agent access standings to get started. That's +3 or more with the relevant corp or faction, provided that neither that corp nor faction have you at -2 or worse.

There are three starter agents for each pirate arc. They are distributed so that most mission runners are likely to have standings to access both (i.e. Minmatar / Amarr / Angels for one and Gallente / Caldari / Guristas for the other). The starter agents, and their corps / factions / locations are:

Angel Sound (Angel Cartel)
Aton Hordner, Republic Security Services, Minmatar Republic, in Egbinger
Arajna Ashia, Amarr Navy, Amarr Empire, in Sendaya
Ellar Stin, Dominations, Angel Cartel, in Konora

Smash & Grab (Guristas)
Arment Caute, Gallente Federation, Federal Intelligence Office, in Orvolle
Atma Aulato, Caldari State, Ytiri, in Obe
Yada Vinjivas, Guristas, Guristas, in Taisy

They are all agents in space, and you must travel to them to be offered the starter mission. You cannot accept the starter mission remotely so you must be with them to accept. I usually head in to be offered the first mission in a covops frigate, warp to within 30km of them and maintain my cloak while chatting with them. Now I accept the first mission, then and there, and complete it remotely while I am still with the starter agent.

You can and will lose some standings with the opposite major factions. Those standings are not large unless you shoot things you do not need to. If you shoot everything the standings loss can be substantial, especially with Smash & Grab.

The Winter-upgrade of our manual includes details on those losses and 'blitz' info on how you can best complete each mission without too much upset to the main factions.

As I see it, they compare:
Angel Sound - The missions themselves are probably a little tougher, the value of the rewards are greater, less opportunity to messup your hisec faction standings in a big way, more dangerous region to operate in, easier region to access.
Smash & Grab - Missions are a little easier, the value of the rewards is less, more opportunity to messup your hisec faction standings (Caldari) in a big way, slightly less dangerous region to operate in, more difficult region to access.

The easiest route, from a starter-agent system, into either of the arcs is for the Angel Sound arc, and that is via Sendaya. It's only four nullsec jumps in to the next agent, while every other starter-agent system is 13 - 19 nullsec jumps from the next agent.

So if your main standings are with Amarr then Sendaya, and the Angel Sound arc, is probably the way to go.

Ships?

I've completed them in an interceptor (stiletto) and two different assault frigates (wolf and ishkur). I'm currently running Angel sound in a rifter and hope to be able to report success soon. The easiest and best so far has been the wolf. The ishkur was fine but a bit slower since I ran it as a drone-boat sniper with very little DPS from the hybrids.

Other users have completed in pretty well every interceptor and assault frigate out there, and I read a forum poster claiming to have completed Smash & Grab in a covops frigate. I suspect a stealth bomber would be fine if you were careful managing the incoming DPS, but I'm applying a liberal grain-of-salt to the likelihood that a cheetah or equivalent would be able to succeed.

Edit p.s. - The Sendaya => K-QWHE route is usually very active over the weekends. So if you're not experienced in nullsec shennanigans then I'd suggest making a start mid-week if you can.
