Moose has a richer taste but it's very, very good. Venison has more of a gamey taste.

But things like Moose and Elk tend to be very expensive here in America, so Moose as a casual lasagna ingredient just sounds odd.

My sister in Wasilla, AK, has so much moose meat in her freezer that she ships the over-flow down here to my sister* and I.

She refuses, however, to ship us bear meat. If she takes a bear, she'll send us enough moose to make room.

Strong red meat, not very fatty. Makes awesome roast, also very good in chili and stews.

Went on a fishing trip with two of my cousins......

Depends on how good or serious you are about it.

If you live in the right places, several hundred pounds of good meat can cost you a hunting license, a tag, a bullet, and some petrol. Not too pricy at all, pound-for-pound.

Heh, I used to live in Anchorage. I bought a car in Wasilla while I was there. Alaska is a very odd place.

Defining taste by text is marvelous fun ...

I too wonder how Moose tastes, so far the only exotic animals I have tasted are snakes, lizards, capybaras, monkey, turtles, horse, dogs and rat meats.

The last 2 when It was found out a local Chinese restaurant I frequented used them instead of proper meats and was closed. I actually enjoyed the food there, dog and rat must not be so bad if properly cured/treated or bathed in yumi sauces. Others are local dishes.

But Moose, sounds intriguing.

The proper sauce can correct a multitude of sins. Lol

Moose is... Moose. Not unlike Elk, but that's the only other meat I'd really compare it to.

I still advocate locust.

It tastes like a cross between chicken / pork and is very lean.

Seriously, its lovely. Prepared properly you'd think you wear eating really good juicy fried chicken.

Crunchy chicken, perhaps. But yes - is not bad. Can also try it with Old Bay seasoning. And beer. Definately need the beer if you're using Old Bay.

We had ours last month done deep fried, "thai style" as in sweet chilli. BBQ sauce... er... corn meal fried... quite a few.

Lemon locust was good, like lemon chicken but better.

Come to the near east my friend! Just gotta wait for the locusts to get crazy in Sudan and migrate north then hop over the land bridge to us.

We shall enjoy locust with plenty of beer and while the sun sets over the med... and then consume more locusts and beer!

Locust with hummus is not great however.

We tried curry locust. In a sauce it doesnt work well and gets overwhelmed by the yogurtyness. Dry rub worked better in my experience. Though we didnt try a curry dry rub... if thats even possible. Question

Though BBQ sauce marinaded was good, had to let them sit for a while though for the sauce to go extra sticky.

There was, last time I was in The Gulf, a stand that opened on the pier in Jebal Ali - They sold a spicy-hot dry-rub varient of chicken tikka, sans yogurt or ghee. Served them rolled 'em up in unleavened bread with onions and cabbage. The rub was deep red in color. Can never remmeber what it was called - but we ate a LOT of it. Locusts prepared the same way ought to be excellent: You wouldn't rub them, you'd toss them in the seasoning - maybe add just enough ghee to make it stick.

I was thinking more of a shaker. Get a tub, add a butt load of powder, and toss them in it. Kinda like what you do with dry rub wings.

Man... this has made me hungry.

Gotta wait til next year at the earliest to test the theory too.
