Haven't tested the new duel system myself. Is it basically a consent to PvP until one of you is dead, or can the duel be cancelled mid-fight?

its consent to pvp until the limited engagement timer runs out OR until one or the other gets pod killed. yes, you can legally pod someone you enter a duel with. :D

Does pod killing end the LE? I'm pretty sure I've seen it stay active. Had a guy take up a fight with me a while back, I podded him into the station we were fighting on, and he immediately undocked thinking it was over.

Sure hope he'd refreshed his clone.

All the duel does is make you and your opponent go Limited Engagement (flashy blue) to each other.

Rest is standard Crimewatch mechanics.
