Technically not single-shard, every system is a separate process on their servers.
Hell, even a realm in World of Warcraft isn't one single system, different regions are run by different servers, that's why loading screens are a thing in that game.

You seem to be confused what single shard means. Implementation and hardware details are irrelevant, Eve has only one instance of universe running.

Sometimes computers just need to be rebooted to clear up issues/prevent them, but beyond that, easier to reboot the system rather than run a ridiculous number of respawn processes at the same time along with the tons of other things that go on. A few minutes without your precious game won't kill you.
