Well, I'd have to if I wanted materials. In EVE, I only mine when it's convenient. At least these days. Far more efficient just to set up buy orders.

Mining is all about getting something you want; achieving a goal. People would mine in a single player game if they could get something for it, but not for the sake of mining unless the mining itself were made fun. Like, if it had you defend your mining barge from pirates by knocking bits of rock loose and causing them to hit the enemies, or if striking the asteroids in the right places caused awesome graphical effects while it shattered large portions of the asteroid and allowed you to scoop up the resources faster, then people would probably do it.

Also, yes I have gathered resources in various different games, usually with the purpose to build something, but sometimes just to sell ... Minecraft, Elite, just about any RTS you care to mention, plenty of other MMOs ...
