I don't like eggs quite so much anymore

Another thing that has looked absolutely delicious over the past few years is Eggs Benedict, but sadly I've yet to try them. I would like to make a nice Hollandaise sauce, but I'd probably mess it up.

Another thing I can't imagine getting sick of is egg drop soup, or the more ghetto version, cracking and stirring an egg along with the seasoning in a pot of ramen just as the noodles are finishing cooking.

It's really just fried eggs, I guess. I can get my runny yolk fix with poaching, without getting the fried egg white flavor that I've grown to dislike.

There's a really easy Dill Sauce I make: Half a cup of greek yogurt (or sour cream), a tablespoon of lemon juice, two teaspoons fresh chopped dill or one teaspoon of dried dill, one teaspoon of chopped capers. Pinch of salt, pinch of black pepper. Whisk together, adjust lemon to your desired level of 'sour', and you're done.

Mods:
Add a tablesoon of dijon mustard
- and/or -
some chopped scalions
- and/or -
a pinch of cayenne pepper.

Throw that over your poached eggs in place of hollandaise , or over salmon, or asparagus...

Is good.

I bought myself a waffle iron about one year ago.
I found several recipes for waffles on the internet, but all of them tasted awful.
Does anyone of you happen to have a good recipe for waffles?

I'd like to apologize for the poor quality of the post above and sincerely hope you didn't waste your time reading it. Yes, I do feel bad about it.

Truthfully? I use Bisquik. Yeah, it's cheating, but it works pretty well, too. I have a sister (yet another one!) who does the whole 'sourdough' thing, but that's more work than I have time for right now.

But you don't have to be boring... I add blueberries, or walnuts, or sometimes I'll throw a couple slices of bacon* into the waffle iron with the batter. Very yummy. Cool

Just make sure to use real butter and real maple syrup on the finished product...


*Pre-cooked! Make sure of that!
