I wouldn't hold your breath Blink

I am a reformed smoker of 45 years. Every other breath is held and the ones that are not...are gasped.P

I doubt your assumption will not be far from the gospel.

Ok, I did a full test and here's what I found.

Things that do NOT change ID on a ship:

jumping
downtime
docking/undocking
leaving ship and reboarding (both in space as while docked)
Leaving ship and have another player board it

Things that DO change ID:

repackaging

So time to build a huge stack of spare rigs and when in doubt of being followed, repack and build ship again *tinfoil hat mode activated*

I expect there will be a lot of high speed chases going on at that point.

My interest are both offensive and defensive. I want to kill that guy and I want to run from that one.

Know thy enemy...right?

+1 for the Sun Tzu quote.

Well, it's really handy in high sec wars when dealing with mission runners :) Once you know the ID of that fat faction fitted CNR you just made your life a whole lot easier when you try to scan him out in a busy mission system.
