I have never heard of Pancetta, but just from the sound of it... I would take bacon.

Um, bacon IS pork belly, genius. It can be cut and mixed with the side and backstrap, but the crap you buy in the US is almost all pork belly. You've obviously never had pancetta. Keep eating that turrible store-bought, oversalted, non-cured, unseasoned pork fat.

I won't even mention speck, as you're clearly unworthy, Philistine. Lol

Go to your local butcher and have him/her carve you up some fresh pancetta and throw it on the grill. It's so good you'll slap yer mama.

Pancetta IS bacon; it's the same part of the pig but it's prepared differently. It's cured and seasoned to the point where you can eat it raw if you want...it's not just salted pig stomach fat like bacon. The big difference is that it isn't smoked, whereas bacon is. What you're tasting in bacon isn't the meat, it's the smoky flavor. Pancetta is also thicker than the bacon you normally buy and much meatier (usually). It can be made like salame, where it's rolled up and sliced like salame, or it's made in strips like your average bacon. The difference is pancetta is much meatier whereas bacon is like thin little smoked fat shavings with little meat on it.

Think of it like this: bacon is to pancetta what Hello Kitty Online is to Eve. It's why I don't understand all this love for regular bacon when there are clearly much, much, much better ways to eat it.

But hey, you know...you don't have to take my word for it if you don't want. It's not like I live in the greatest place in the world for pork, or just about any other type of food (Italy). Lol

Here's a really good recipe for curing your own pancetta. Like the author says, "if bacon makes everything better, then pancetta makes everything better still!" It can be made into a pinwheel but most people eat it in flat strips like bacon.

I almost feel guilty that I cannot share any of our home-cured pancetta with you fine Eve players. If I could invite you all over here, we'd eat ourselves stupid.

You really, REALLY have to try speck, though. The Austrian-style speck is closer to pancetta, whereas the Italian-style speck is smoked prosciutto. The two are similar but both amazing in their own right. Once you eat speck, you'll forget all about your love for bacon. I know that seems impossible, but you're gonna have to trust me on this. Euros: amirite or amirite?
