Once you've finished using a new program, the Catalyst Control Center will ask into which mode it should be set for the graphics. High Performance or Power Saving. I like that.

That's actually asking you whether you want to use the integrated Intel HD graphics or the ATI video card, NOT in which mode you want to use your standalone video card in.

Eve Online, can't seem to switch it from HD4000 (in game menu) to the 7970M. Bit strange. Seems to work fine, then again haven't really tested it in a fleet situation yet. I did set everything high and looked bloody amazing.

See above. That's how EVE will report it for some reason no matter what you select. It's a bit weird, but, eh.

Touchpad is frikking HORRIBLE ; Wifi gaming lags / Never had that issue with cable.

There are very few touchpads I ever tried that are not horrible compared to a mouse, and even then, the mouse is a whole lot better still. That's just how touchpads are. Just disable it and use the mouse instead.
As for the wifi thing... I really doubt it's JUST a driver issue. More likely, it's whatever settings the wireless router has for transmission. Wifi simply can't compare to cable in overall realiability/performance, even with the most expensive wifi hardware and highly optimized settings, it will only come fairly close.

Also...

Your 3Dmark11 results look to be quite near the lowest end of results reported by people who have a 7970m (highest was around P6900 or thereabouts with the same CPU).
What drivers are you using ? The ones that came preloaded, or have you updated to the latest official catalyst drivers ? How about trying the beta drivers too ? Have you fiddled at all with the driver settings or not ? If so, how ?
What speeds is the graphics card set up at ? The ones reported by 3Dmark are the idling speeds for 2D graphics. Use GPU-z to see it when it's under full load. Have you considered overclocking your GPU ? How hot does it run now under full load ?
