are Aeons and Nyxes, for example, just "better, stronger, tougher" versions of their Carrier bretheren, or do they have different roles altogether?

You're not going to be transporting your crap around in a suppercarrier. Also, they can only use fighters/fighter bombers, so they're only good against structures and other capitals, unlike carriers. Also supers can't get into wormholes. In general, supercarriers' main function is DPS, and carriers are deployed when remote reps are needed, or when your friends need their junk moved.

And sort of a follow-up to that, Titans vs Dreads: same but bigger?

Not as much as you might think. There's the jump portal, docking regulation, local vs remote rep, DD, etc. Similar to supercarriers vs carriers, you can set up (some) dreads to be pretty effective against subcaps, but not so much for titans (wasn't always the case). Titans are only used with a large support fleet when you're sure there isn't any significant danger present. Other then that, their main function is as a convenient mobile stargate.

you cannot dock super caps.

I thought they were changing this with the winter POS changes?

No. You can park inside a POS and log off, but you cannot dock. There were some rumors of outpost modules that might allow this, but there has been no official statement, and there isn't likely to be one any time soon.
