Using two accounts on 1 lvl 4 mission

what would you guys say about using cap transfer to improve the cap stability on each ship?

e.g. a Nightmare and Dominix using 2 large transfers

No problem with the setup. Unless it's against Guristas. Then it's a bad idea.

Does ECCM help to stop jamming in guristas missions?

Yes it helps, but it isn't going to prevent it entirely.
