how am i doing this?
easy

when said package is in your hold, click the package u want to see on the left (in the list under your active ship) and you see everything thats in there. works in space and in dock.

Intentional, and AFAIK as old as the courier contract system itself.

Before you ask, people who scan your cargo in space can see the courier contract contents too.

earlier you had to right click package and select "view contents" to see everything inside without breaking it - so nothing new, except maybe a bit easier now.

You can hide the contents of a courier contract from cargo scanners by "plastic wrapping" it, or in other words, setting up a 2nd courier contract for the boxed goods themselves from a different account.

Of course if you do this you run the risk of someone assuming that if you are going to go through the trouble of doing that, then it must be REALLY valuable.

Hmmmmm......I could see someone using this as a scam the scammer method.
LOL.......plastic wrap a piece of trit in a shipping container(so large m3 for small value) and then insure it at a reasonable amount for the m3 shipped......
