It's future and all this crap like "new eden" are everywhere in EVE.

Much more realistic scenario would be world that takes stuff from Chinese, Indian and African cultures, since by 2040 there is over 5 billion people in Asia, over 2 billion people in Africa. Old world, Northern America and Europe is falling. Future third world war will be fought between China, India and Africa, while NA and Europe will be pets and targets. Outcome from this will be destruction of western culture. There will not be yanks to discover wormholes or jumpgates.

Or is backstory just written for christian players? To make them feel better in the world where they constantly are getting kicked in their asses?

I think it's because of the relationship between the Jewish/Christian creation myth and the concept of a "new beginning". It's common across lots of Sci-Fi. Star Trek had the Genesis Project, for example.

We have no information about where we came from before the eve gate collapse, it's all gone. Talking about "earth" like it means anything is dumb.
Also the Amarr were the first empire to get back up after the fall, so it makes sense that their name for the cluster stuck.

Christianity has spread through the entire globe and only really has Islam as any real contender to deal with. Trying to claim that religions that are already underrepresented here and now be equal 20,000-30,000+ years in the future is just silly.

You had the right of it involving India and China, but their relations are getting stronger and stronger with improved trade and military relations...and that assumes China doesn't crush itself. If they end up going against others, it will be at the behest of countries with whom they have stronger ties, not out of some border conflict.

I'd recommend reading China: Fragile Superpower and a few other books about the area.

As for Western Civ dying off...I'll just say July, August, McDonald's, Supercarriers (the real ones)

new Eden is actual an old testament derivative, it comes from Eden or where god created man. Because it is Old Testament that means it is in the base of all 3 of the major western religions, Judaism, Christianity and Islam.

As for the Asian religions, they kinda reference an Eden of sorts but it gets messed up in translation because its conceptually not the same.
