When i save fittings in-game, they don't seem to end up in the C:\Users\Username\Documents\EVE\fittings

Is there another location where they are saved, or are they simply not accessible outside the game?

Saving fittings means they are saved on the server. If you open you fitting window and then click browse you can look up all saved fittings.

Once you export fittings they are saved at the location you mentioned above.

EDIT:

Same with for instance EFT / EVEHQ, if you make a fit there it will be saved at the mentioned location and you can use the import button ingame to import those fittings into EVE itself.
