Mining in low sec space on my own?

I see it is almost impossible to mine in low sec space without being intercepted by the npc pirates.

How do people mine in low sec space and is there any tactics I can learn on how to mine in low sec space.

There is some ore I have to collect in low sec, the drones and other npc fighters making things difficult.

if it's for a mission just buy the ore on the market, nobody really mines in lowsec it's too dangerous

Mining in lowsec is no different then anywhere else. In fact, its a lot safer then highsec. In highsec, you are always at danger of a suicide gank and wardec, and there are so many people passing through that it is next to impossible screen out who you should avoid. Now, in null, you mine by keeping an eye on your intel channels and docking up anytime a non-blue comes into system. Mining in lowsec is exactly like mining in null. There are many systems that are devoid of population - find one of these systems, start mining while keeping an eye on local. If non-blues enter your system dock up. Its as simple as that. People fail at this because they want to treat lowsec mining as a semi-afk activity - once you realize lowsec is never semi-afk then you are on your way to success.

As for the op's question about npc rats - there are only two things you can do - either tank your stuff or have a combat ship available to clear the rats. Back in the day when hulks were a thing - there used to be a way to fit them to handle null npc battleships. I imagine that a skiff could do the same thing today - but imo - if rats spawn, just dock your ship, pull out something like a drake or a cane and blap the npc, then go back to mining.

The trick is finding some properly dead lowsec space, there you find the biggest system where your mining spot cant be seen if warping from gate to gate. Then you can mine pretty much afk.

Fw space is always active, so try to find non fw lowsec areas with as little activiy as you can. Amarr non fw lowsec for example.

You can always create bookmarks on belts and pre align down the crescent in a way that you can throw your mining strippers (kek!) on an asteroid ahead and mine it always ready to warp out. The slower you are the better. But the better question is what you plan to do with all these minerals?
