Never tried or even thought of this before but does EVE work with joystick/pilot controls?

Technically you could map the manual piloting keys (Arrow keys by default) to your joystick axis. But as EVE has no official joystick support, may or may not work well.

Yeah, using a Joystick to control the ship would be nice.

However there's way too many other game aspects in which the Joystick couldn't operate, even if it had multiple buttons. Along with dictating which way the ship goes, controls are also needed for targeting, warping, jumping, etc. More importantly, activating and deactivating various modules fitted on the ship, controlling drones, using multiple Chat windows as well as all the other 'interactive' windows that players use to interface with the game.

Eve is more like a real time strategy game than a flight simulator.

This. Also going back and forth between Homeworld's "go to point" controls and Eve's "Approach a point in space" is really jarring. Not sure which I like better either.
