How do I get far enough away from a celestial object to set up a mobile depot you can't just warp to? Or am I just dumb

You warp between 2 celestials objects. When you're half way in warp, you create a bookmark. Then, you warp back to your bookmark.
You now have a safe spot. Only people with combat probes can get to you there.

It has to be off grid, the grids are pretty large these days so it would have to be multiple thousands of KMs.

As the post above says a safe spot is the best option but if you did really want to burn one you could drop a can in space and bun away, when the can disappears you are in a different grid.

Keeping in mind that grids have a diameter of 16,000 kilometers, even with a speed-stacked inty that'd be quite a while. Only reason to burn that far is if you want an off-grid insta-undock.
