They've done it with alliance tournament and people could make replays with the data points, so it should be possible to be done if CCP were to allow export of that type of data.

It will never happen unless you or someone else happens to be FRAPSing the fight. The memory it would take to record all of New Eden at every moment and keep it on file would be stupid ridiculous large. Star Citizen has a better chance of happening before 2025... which won't.
