I'm doing some theorycrafting.

Question:
What is the very good P0 extraction rate?
Assume single P0 resource, single character on a single planet.
Please share your numbers.

It depends entirely on the planet type, security level of the system, and the resource.

If I can get 1.5 million units over the entire extraction, I'm usually happy.

Yesterday I restarted extraction on one planet in nullsec with 10 heads (1d 22h cycle) with 1.6M units estimated. Another was about 1.4M units. The planets with 2 resources have 700-900K units per resource, same cycle.

I'm my own NPC alt.

I can extract enough to keep 5-8 basics making t1s constantly

The highest I've ever seen in 75,000/hour, which equates to 1.8mil per day.

That's never sustainable though. The real question in what you can get on average sustainably.

Total yield is meaningless, only per hour extraction rate is relevant, and then only if you are maintaining it. I run 3 day cycles on my nullsec pi, and I aim for about 40k p0/hour per planet. Some produce as low as 31k, some produce upwards over 49k average/hour.

If you want super high rates, do 12 hour or 1 day cycles, but enjoy your joint problems. I have 49 planets on 3 day cycles (extractor p0-p1 planets, and p1-p4 factories), that's enough cycling and importing/exporting for me.
