cannot complete "starting simple"

I already got ores and docked but it still cannot be completed.

How do I get this completed?

Did you get the ore from space or did you buy it from the market?

How did you Veterans start?

I notice the mission is expired.

By any chance did you mine some, wait a day, then mine some more?

If that is the case, then you need to mine ALL the ore until the asteroid disappears.

Failing that, file a stuck petition.

To expand on what Tao said, uncompleted missions reset at down time typically. So the missions are coded to be run where you pick up the mission and run it and turn it in. If you wait a day or two to start the mission that usually is not a problem but when you partially complete a mission and then come back after down time and restart the mission sometimes they can bug out like this.

I know Tao's answer fixed the issue for you but I'm just making you a little more aware of how the missions function. Hopefully it helps in the future.
