Ive noticed things like frozen food, antibiotics etc on the regional markets, they seem limited in number and I wondered why are they even in game?

Trade goods can be purchased from NPC's in one station and sold to NPC's in another station for a small profit. You can also shoot NPC hauler convoys and loot their cargo. This method of earning ISK is a holdover from the early days of the game and rarely used.

Some trade goods are also used in research & manufacturing.

There is no broker fees for immediate orders.

Transaction tax upon sale is inescapable (SCC is worse than CONCORD).
