So I've been wanting to start doing exploration here lately. So I fit my cheetah out and headed out to do some scanning. My skills arent Lvl 5 but there decent. So I live in null sec out in the Syndicate area. I go to a few system scan down some sites...
ALL unknown.. So i try again later. unknown.. Am I doing something wrong to only be finding unkown's?

It is possible all you would find are unknowns as random is random.

But just to be sure check your filter to make sure all the different types are checked.

I'm mainly trying to find mag and radar sites. I think I can run most of them with a active tanked pilgrim. What do you guys think? I can fly amarr and minny ships. But the pilgrim just seemed like the best choice.

Make sure Mag and Radar are checked in your scan filters. By default they are not checked. Mag, Radar, Grav and Ladar will identify the name at 25% signal strength. If it's higher than that and still not identifying, then it's likely a wormhole.

In null sec I don't think you will be able to run all of the sites in a Pilgrim. Some will require a BC, and some even a BS.
