Would it be feasible to put up a small POS, barebones with very little of anything but the necessary POS mods to run the reactions?

The idea is, putting up the POS running the reactions and then unanchoring and putting it up again someplace else. A "mobile meth lab" approach, to keep from being noticed or getting my POS destroyed.

I would run only the reactions necessary to fullfil an order/run out my supply of material, then pack up until it is needed again.

Mainly I'm looking for guidance on the POS size, obviously the small is best due to size/mobility, but if it won't support this sort of operation I may need to adjust our initial plan.

Edit: I hate alt posting, but it is necessary under these circumstances.

Best place would be a w-space system, in my opinion.

Otherwise in friendly lowsec or nulsec space.

We've had towers reinforced within hours of anchoring them in lowsec in what appeared to be dead systems. Best to make nice with the locals first.

A hostile POS anchored in 0.0 will attract attention. Any new POS anchored in LowSec will also attract attention from the locals. In either case, the chances of having some bored dread pilots popping your tower is very high.

As Tau said, either make friends with the locals PRIOR to setting up your POS or find an uninhabited C1 or C2 wormhole to base out of. If you go down this route, you'll want to keep a scanning alt in your wormhole in case the connections close while you're out huffing gas or whatever.

Prior to being evicted from my C2 recently, I used to keep an eye out for LS & 0.0 connections that led to one of the Gas constellations (or close by). I'd then find the gas sites and bring out some Ventures to huff it all up. It was quite lucrative at times.
