Windowed Mode

You should be able to find it in the ESC menus.

Be warned that Windowed Mode will consume more system resources than regular Fullscreen.

word of warning : isboxer comes with functionality that will get your account (s) banned should you use it i.e. input broadcasting/multiplexing

I will add to this and emphasize that ISboxer itself will not get you banned, just the select function that Ralph described.

Unless you have a single extraordinarily high resolution monitor, it's probably going to be much better to run one client per screen (if in space) or just two+ that you alt-tab between (if docked).

There is a tool that will allow multiple clients on one screen without breaking the EULA. Not sure what the current status of the project is but the thread is https://forums.eveonline.com/default.aspx?g=posts&t=389086
