Having spent upwards of 10 days in hospital several times in my life due to severe pneumonia, I feel your pain.

Only advise I could give for sleeping is if you have extra pillows, blankets, or anything, build up a bit of a ramp at the head of your bed so you lay down with your chest as elevated as you can find comfortable.

Completely horizontal is probably the hardest way to breathe with any kind of respiratory infection.

Cap ship production would be a pain.

You'd need a C5/C6 with nullsec or lowsec static or regular connections to via it's chain.

Hauling in all those materials via low/null or indirect highsecs would be agonizing I imagine.

Quite do-able, but I imagine a lot easier to just do in lowsec.

Not reliably.

Ore sites only appear as anomalies so one day you might have a few, then nothing for weeks.

I do some small scale component manufacturing in my C2 along with polymer reactions and run sites in it's C3 static for extra money. I can mine all the ore and gas I need from the hole or it's connections to be self-sufficient, though it's a bit of work for small returns. Sometimes hauling stuff in is just more time efficient. Easy enough though with a highsec static.
