Alright I gotta post this in MD now since in the section I posted this before, nobody answered...

I recently read up on the CREST API. However, while I found some useful information, I couldn't find any info on how to get all Buy and Sell orders for a specific Item for a specific region (or system/station).

So, before I dig deeper and spend lots of time trying to find a way that might not exist, I thought I'd just ask here if this data is even available. So... can it be done? And if not, then how does Eve Central get all of that info?

Exactly! While we are at it; is there a way to get daily sales/buys for a specific item in a specific region? Or at least the Quantity of items transacted each day (like in the in game market view table history)?
