This http://alysii.com/eve/pi/ for the "what planets for what thing" and this http://www.thonky.com/eve-online-guide/planetary-interaction/ for everything else, there is EVE-Uni too which 1 or 2 pages about planetary interaction.

There was a bit of an ulterior motive, but this recent thread has a good introduction to PI.

This Fuzzworks website will help you find profitable items.

A suggestion is to get a few basic skills and put up a simple P1 planet as a trial run for a couple of weeks. It will help you when you are ready to start building more complex P2 / P3 chains.

It hasn't changed much in years. Other than the player-owned customs offices, I can't recall of a change to PI in the last 3 years, so any resource is probably still accurate,

Yep I paid Sun-Tzu to write that to lower the price of Robotics, because my alliance uses a lot of blasters, and Robotics make up 30% of the cost of T2 blasters.

It will still help you learn PI and make ISK, you'll just make 7-8% less ISK that you would have when Robotics were a bit higher in price.
