Courier Contracts.

Just curious. Can you do courier contracts in more than one trip? Or can you only do one all at once.

Setup a contract for each stack or item. Simple.

So yes you can create multiple contracts.

I'm thinking there may be more to your question.

When you haul courier contracts, you can not break the package into smaller parts. You must haul the entire thing in one trip.

A cunning person might be able to find ways to use this to their advantage, for instance by creating a contract that is only possible for a perfect skilled freighter pilot to complete with a large collateral.

Unfortunately not, the maximum size of a courier contract is 981250 m^3
