Are there any current up to date guides that cover skills and setting up i have watched a few videos on youtube, and looked at some old guides that go back 2-3 years but cannot seem to find anything current.

EVE-Uni have some setups and general advices http://wiki.eveuniversity.org/Planetary_Interaction and I use this website too : http://www.thonky.com/eve-online-guide/planetary-interaction/ , it's still relevant to me update-wise.

Since PI hasn't changed in over three years (other than the change of customs offices in highsec to player-owned), those guides are still current and accurate.

My suggestion is to create a single test planet creating either P1 or P2 to get a feel for how PI works. Save the multi-character or factory planets until you have a bit of experience.

do planets replenish or will they eventually run dry? i think a test planet is the way to go for now

I read somewhere that planets will never run dry. Ressources which areharvested at one place respawn at another. You might have to shift the extractors but they will always have something to extract.

They will replenish. If you don't over mine a hot spot you can usually find a balance of how much can be extracted (unless other players are hitting the same hot spot). In some cases you may have to relocate your extractors occasionally.

I think there was a vague statement from CCP that said existing spots are independent and will replenish when they hit a certain level - you don't have to chase materials endlessly around the planet.
