Once one can is opened, the timer starts. And no warp away is needed. If you open a can and sit there for an hour....poof.
1) I tested this on an untouched low-sec relic site by solving a couple of cans and then moving off 100km and watching the site. 53 minutes later the site despawned without anyone else showing up.

2) I found a couple of partially completed sites in different high-sec systems. They are both still there 2 hours later (+ some amount of time before I found them) I'm not staying in the sites.

Orlacc: are you getting your data from sites that you stay in for hunting? Or do you see the same results if you warp out of the site?

Shiloh: Yes same results whether I stay or circle back. Keep in mind I only do null/WH sites so not sure if hi-sec is different.
Way back when there were rats, the site would not start the despawn timer until you left. Or cloaked.

There are also despawning site from scanner issue. Like in DED 4 monastery, when we killing guardian, site will vanish from scanner but it's still there physically. This occurs with sleepers caches as well.

That is on purpose. The idea is by removing the site from scan results, players will not keep visiting it over and over, re-starting the de-spawn timer on a site that is now useless.
They also did not lie having the site de-spawn when there are players in the site. It use to be that way: You would be in a site, and suddenly it would all disappear. Although I think that can still happen, especially if you cloak.

Edit: Also many data and relic sites have one "big" can, one most likely to have the god stuff. Sometimes it has a unique name. Hacking that can seems to have a different effect than hacking any of the other cans.

One "big can?" Malarky. The name of the can will tell you the likelihood of good loot (and more difficult hack) as in Sansha Ruins as opposed to Remains. Other than that random is random.

This is really random. So far angels are worst (average), sanshas are best. I don't recall how are guristas i think they are similiar to serpentis sites. Really random and have nothing to do with name of the can. Ruins cans sometimes contain carbon.

I just wanted to stop in and say that everything Orlacc has said in this thread is true. Seriously.

1 hour despawn.

There is no 1 "special" can.
