There was an interesting debate in the Help channel (yeah, off topic for the channel).

Some people believe EVE was coded in Python, others say C or C++, and others still say it was a combination including pur assembly.

Who has the real answer?

Depends on what you define as EVE. The client and server are mostly Python with some C. The XML API is .NET, so are all our web sites.
