If I set skills to be trained and I cancel my subscription will my skills continue to be trained after the time runs out?

No.
It used too, but now it only runs for a few days, then stops. The few days, is for those that mistakenly forgot to renew.

More precisely, the training will stop at the third downtime after the subscription ended.
